It’s Eli Vedral here\u2014baker, owner, and founder of Kookaburra Cookies. All of my cookies are “strumble” cookies. Strumble\u2122 is my riff on the crumbly streusel topping that you often find on muffins, cakes, and breads. I upgraded it and fused it with my favorite dessert: cookies!<\/p>\n

The idea for Kookaburra Cookies first came to me as a teenager while studying abroad and working at a restaurant in Sydney, Australia. One of my favorite things to do was try hole-in-the-wall restaurants and unique dessert shops. I was shocked at how popular food fusion (or the combining of foods that do not traditionally go together) was in the land down under. It completely changed the way I thought about food, and about baking.<\/p>\n

I named my business after the Kookaburra\u2014an iconic bird native to Australia\u2014because they are known for spreading joy and making people smile. I want to channel that same energy through my cookies.<\/p>\n

I develop (and continue to develop) all of Kookaburra’s recipes from scratch myself. My cookies are soft, jam-packed with unique flavors and textures, and balanced with a hint of salt. Even after three years, my top-secret recipes are still constantly being tweaked and improved.<\/p>\n

As a recent graduate from Creighton University, I’m a big fan of Omaha. My goal is to open my own dessert shop and continue to spread joy through my cookies.
